Why is churrasco unique? Rural gauchos (horseback riders) had easy access to livestock in the 19th century. They would roast the beef on skewers over an open fire, bringing out the natural taste.
Traditionally, gauchos would go around the tables, offering endless slices of steak from the skewers. This is called rodizio.
Restaurant personnel now walk around tables with skewers, feeding guests when they see the green flag, indicating they want more. When the marker is red, it means the guest has had enough. Other condiments and side dishes serve to improve the flavor of the meats.
